02 Freezing method                                        appropriate for the material

Using a core thermometer, we repeated trial runs for each foodstuff to determine the time required for the center of the foodstuff to freeze properly. Even the temperature of the ingredients at the start of freezing is thoroughly controlled.As a result, drips and texture problems during thawing are minimized.

03 Storage・transportation

The product is stored in vacuum packaging at -60°C.

We thoroughly control the temperature during transportation to prevent the temperature range from dropping as much as possible.

04 Proper thawing method

We enclose defrosting instructions for each product to maintain the quality of the product.
​We recommend thawing in a refrigerator or in ice water.

Defrosting at room temperature or under running water may result in quality deterioration.

Features of 3D Freezer

This is an ACVCS (non-ambient convection chilling system) quick freezer, not the air-blast type used in general freezers. ACVCS is characterized by the fact that it cools food placed inside the freezer in an enveloping manner.

Features of Rapid Freezer

Rapid liquid freezing minimizes the impact on the food to be frozen, suppresses dripping, and maintains freshness, taste, texture, and appearance! Improves yield rate.
The same taste and quality can be provided even after thawing, which expands the possibilities.
Rapid Freezer is a quick liquid freezer (alcohol brine freezing) that performs quick freezing without degrading food quality by immersing food in a special freezing solution chilled to -30℃.

Compared to conventional freezers, the freezing time is faster, and by minimizing the deterioration of food quality during freezing, the quality of the food remains the same after thawing as before freezing.
